Louiza and Peter Marinis, who married in 1979, began their entrepreneurial journey shortly after, turning their love for food and community into a thriving business.   • I am a registered dietitian that really loves food. As a dietitian that specializes in gastrointestinal health, I have seen hundreds of patients with a number of different chronic “gut” conditions. These conditions leave patients sensitive to many foods they once loved and can leave them helpless with not knowing what to eat. Many of these patients were told to go on the lowFODMAP diet (an effective elimination diet that can help identify trigger foods), but were left without resources or food options that felt easy.​

    After seeing so many people frustrated with the lack of food options they had both inside and outside of their home, I decided to create Unbothered Foods - a company committed to creating delicious, 100% sourdough food products that leave your bellies feeling happy and unbothered.

  • I was born and raised in Italy, and from an early age, I was steeped in the rich Italian food culture. In my hometown of Venice, I learned the art of preparing handmade pasta from my nonna while listening to stories about my grandfather's specialty food store. Summers were spent with relatives on my father's side in rural Sardinia, where my family worked as shepherds, cheesemongers, and butchers. It was there that I learned the deep-rooted value of the region's traditions, honest ingredients, and dedication to authentic craftsmanship

  • I am a proud second-generation Thai and a self-taught cook. Born in central Illinois, I spent my summers growing up outside of Bangkok with extended family, learning how to cook. Immersed in “suan” life—a riverside culture rich in tradition and slow food—I absorbed dishes and practices that are becoming harder to find. Every year, I would return to America, practicing, researching, and obsessing over how to recreate the flavors of Thailand. When I was 8, I even wrote a cookbook with colored pencils—though it never got published.

    Nam Prik Pao is an essential element of Thai cuisine and is traditionally featured in dishes such as Tom Yum and Pad Thai. Here at Pink Salt, we are not limited by tradition, rather inspired by it. Our sauce is balanced and versatile — tangy tamarind and natural palm sugar beautifully coalesce atop a foundation of caramelized shallot and garlic — and stands out from the typical chili oil or crisp. This elegant condiment perfectly complements cheese boards, pastas, stir-fries, salads, and anything else you’re craving (yes, even ice cream).

  • Four Star Mushrooms is building an integrated food ecosystem through the marriage of controlled-environment and regenerative agriculture. Our brand cultivates premium quality gourmet and functional mushrooms that we distribute directly to restaurants, hotels, caterers, clubs, and grocers across Chicagoland.

    We grow 7 varieties of mushrooms year-round and have acclaim for the best chefs in Chicago. Quality and sustainability are paramount to our brand. We turn organic byproducts from adjacent industries into fuel for our 'superfood' mushrooms, in turn creating a rich soil amendment used to regenerate soil and, ultimately, our food system. We have a model for a carbon-negative, zero-waste vertically integrated food system.
